Salty Cardamom Granola
Welcome to my new December series: Gifts You Can Eat (that aren’t cookies). For the first installment, we’ve got PROPERLY salted granola with cardamom and freeze-dried berries. Granola is VERY forgiving and also a great way to clean out your nuts and seeds. Feel free to swap out the nuts or seeds here for others you may have lying around. See how it’s made here.
Ingredients:
6 cups old fashioned oats
2 cups walnuts, roughly chopped
2 cups almonds, roughly chopped
1 cup pumpkin seeds
1 cup coconut flakes
½ cup brown sugar
2 tsp. Kosher salt
2 tsp cardamom
2 tsp vanilla
1 cup maple syrup
1 cup olive oil
2 cups freeze-dried strawberries or mixed berries
Flaky salt
Special Tools:
6 x 16 oz. jars with lids
Various fabric cut into circles (7 “ diameter)

Make it!
Pre-heat your oven to 300F°.
In a large bowl, combine the dry ingredients first: oats, walnuts, almonds, pumpkin seeds, coconut flakes, brown sugar, salt and cardamom. Toss with your hands to incorporate.
Add vanilla, maple syrup, and olive oil and stir with a wooden spoon to combine.
Line two sheet pans with parchment paper and divide the granola evenly, spreading to every corner of each pan.
Bake in 15 minute increments, stirring the granola and rotating the pans. About 45 minutes, or until golden brown. Remove and sprinkle with generous pinches of flaky salt while the granola is still warm. Allow to cool completely.
Once cooled, stir in the freeze-dried berries and divide amongst your jars and seal. Enjoy!
