Blood Orange Tiramisù Cups

Makes 12 x 6 oz. wide mouth jars

Stand mixer
Piping bag or gallon plastic bag
Ingredients
2 cups mascarpone
1/3 cup heavy cream
2 tbsp Cointreau or Gran Mariner
5 eggs, separated
1 tsp vanilla extract
1/2 cup granulated sugar
1 tsp. orange zest
30 ladyfingers
2 cups fresh squeezed blood orange juice, from about 10 blood oranges
Make it!
In a stand mixer, combine mascarpone, cream, liquor, egg yolks, vanilla, sugar, and orange zest. Using a whisk attachment, mix on medium until stable (not soft) peaks form. If you drag your finger through it should leave an obvious trail.
Move the mascarpone mixture into another bowl. Wash out the stand mixer bowl and the whisk attachment. Then whisk your egg whites until stable peaks have formed. Be very careful to not over mix.
Carefully fold the egg whites into the mascarpone mixture. Third by third.
Add the mascarpone mixture to a piping bag and tie the end with a rubber band. Set it (standing up) in a tall beer glass. This will help to catch any loose cream. You might need to add it in batches, store the bowl in the fridge while you pipe.
Cut the ladyfingers in half so that they will just reach the top of the mason jar when placed standing up.
Set up your station. Pour the blood orange juice into a shallow, wide bowl. Line up the mason jars and ladyfingers. Slice a 1/2” opening off of the tip of the piping bag.
Assemble! Pipe a swirl on the bottom of each jar, to cover the surface. Dip each lady finger into the blood orange juice, turning over one time. Place the ladyfinger cut-side down on the side of the jar. Evenly space them apart so that there are four (we will fill in the gaps). Laslty, place one ladyfinger in the center. Using the piping bag, pipe along the sides of the jar to fill in the gaps. Repeat in the center, until there are no holes. Secure the lid and tie with colorful ribbon!
Chill for a minimum of 8 hours, but best when chilled overnight.
