Calvin's Famous Waffles!!

These are the best waffles you’ll ever eat. They are light, fluffy and supremely crispy. This is due to the addition of yeast and an overnight rise. Whip up the batter before bed and you’ve got waffles the next morn! Learn the story behind the waffles here.

Time: Overnight, plus 15 active minutes

Makes ~8 large waffles

Ingredients

  • 1 package active dry yeast

  • ½ cup warm water, not hot!

  • 2 cups warm milk, not hot!

  • 1 stick of butter, melted

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 2 cups all-purpose flour

  • 2 eggs (DO NOT ADD UNTIL MORNING)

  • ¼ teaspoon baking soda (DO NOT ADD UNTIL MORNING)

  • 1 package thick-cut bacon

Make it!

  1. Sprinkle the yeast into the warm water in a large mixing bowl. Whisk and allow to bloom for five minutes. Meanwhile, in a medium bowl, mix together your flour, salt and sugar.

  2. After five minutes, add in the warm milk, melted butter and dry ingredients into the large mixing bowl. Whisk until smooth. Cover with plastic wrap and store on the counter. If your house or apartment is above 70°F, store in the fridge. 

  3. The next day your mixture will have bubbled and grown a bit in size. Heat up the waffle iron and remove the plastic wrap. Whisk in the two eggs and baking soda. 

  4. Meanwhile, make your bacon! Preheat the oven to 420°F. Line a baking sheet with aluminum foil and space the bacon out on the sheet. Bake for ____ minutes until perfectly crispy. 

  5. Pour ½ cup batter into the waffle iron and cook until golden brown and irresistibly crispy. Cheers!!
