Lemongrass Pandan Gimlet

Let’s recreate a cocktail I had in New Zealand! Pandan is a tropical shrub that grows in Southeast Asia, it tastes sweet, grassy and nutty. It’s also produces this gorgeous green color! See how it’s made here.

Makes 1
Ingredients
2 oz. lemongrass infused gin (see below)
.75 oz. pandan simple syrup (see below)
1 oz. lime juice
.5 oz yuzu juice
Ice
Garnish: lime wheel or pandan leaf

Make it!
In a cocktail shaker add gin, pandan simple syrup, lime juice and yuzu juice with a handful of ice. Shake until cold, 15-20 seconds. Strain into a chilled coupe or nick and nora glass. Garnish with a lime wheel or better yet, a pandan leaf!

Lemongrass Infused Gin — wash a lemongrass stalk and slice in half longways. Using a spoon, whack the lemongrass to bruise it (so that it releases more flavor). Trim the ends to fit into a small glass bottle with a lid. Add lemongrass and fill with gin. Allow to infuse for at least 24 hours.

Pandan Simple Syrup — add 1/2 cup water and 1/2 cup sugar in a small saucepan. Over medium heat, dissolve sugar and add 3 drops of pandan extract. It’s very strong and vibrant in color! If it seems too weak, add a drop or two more. Cool completely and bottle.
